Question Expected Range of Color?

Does the color in the attached image represent what I should expect from the unmodified Canon Digital Rebel XTi used to capture it? This is a half-dozen two-minute images through a Tak E-180.

Nope. You need to take "flats". I'm not sure how they would work in a one-shot color camera, but would probably remove the color cast quite nicely.
